I am a Tupelo native, although I lived in Mesquite, Tx., briefly, in the mid-80's.
I began as a part-timer on KZ103 in 1987, at the age of 18. Boy - it seems like a lifetime ago! I've spent my entire 24 year radio career with KZ103! I've worked just about every shift on the station. I started out on overnights, progressed to nights, afternoons, mornings (running kidd Kraddick) and now, I do middays (10am until 3pm).
I married my husband, Johnny, in Oct. of 2005.

Ooh - do I have a great recipe to share!!! I have wanted to like Quinoa SO much, but the one time I tried it, I just didn't care for it. Now I realize, I just didn't have the right dish! Quinoa really takes on the flavor of whatever you add it to. This is a Mexican dish I found online and made last night. Hubby even helped me with the prepping! You have GOT to make this. It is absolutely fantastic!!! Here's the recipe!

I said on the air that I was making this cake for our Thanksgiving lunch here at work, and, if it turned out well, I would share the recipe. Wellll..... it turned out FABULOUS! Got compliments on my cake and they were disappointed when I took the leftovers home...heh heh! But it's sooooo good! Make this. You won't regret it!
I introduced my hubby to salmon patties this wknd. So easy to make and SO good! They are wonderful w/leftover biscuits the next day! Here's the recipe I used (btw- I used Ritz crackers instead of saltines and rolled the patties in the crumbs as well). YUM!
I had to lock up our newest kitty, Oliver. He almost injured himself trying to jump on the counter. That salmon scent was just TOO enticing to him!

Today, it’s hard to think of anything but the loss of one of my long-time friends, Martin Thomas, who passed away yesterday. Folks that ate regularly at Logan’s in Tupelo knew him as Marty and were well acquainted with his bright smile and personality. I became friends with him, like so many of my other friends, through the radio station. I met him in 1990 through a friend I had made as a result of working at KZ103.
We made many a road trip together, always filled with LOUD, fun music, which we would sing at the top of our lungs. Music was one of our many bonds. We would blast Bee Gees, Michael Jackson and all sorts of 70’s and 80’s tunes from our youth. We went to concerts together, movies, and shopping…LOTS of shopping! That boy LOVED a thrift store better than anyone I’ve ever known.
He and I shared a particular love for all things sweet. One of our favorite things in the whole world was birthday cake. In fact, before I was married, we would order a huge birthday cake each year and split it, since we shared February as our birth month. We always had the top completely covered in roses, because we loved frosting so much!
Martin was the very first one to call me when I was having an exacerbation with my M.S. He would always offer his help, if I needed him. He was one of the first ones I told when I was diagnosed in 2002. He was like my brother in so many ways. We would laugh so much together and sometimes we would spat like siblings, but through it all, I always loved my buddy! I always confided so much to him. He was an easy person to talk to. We both decided over the last few years that we would MUCH rather text than talk on the phone, and he texted me pretty regularly – especially when there was stormy weather. In fact, the very last text I received from him was yesterday (Wed., June 5), telling me he was about to mow his lawn and wondering if we were about to get hit with a storm, which we did. He loved storms and would get excited whenever they were brewing.
I think today I will visit a thrift shop, enjoy a cupcake, and crank up some Michael Jackson in honor of my friend. Will miss you, Martin. You were much loved by many! 41 is too young to go!
Okay, so I talked about this on the air recently. I said I would post this recipe for Creamy Chicken & Tomato Soup if it was good. My hubby and I discovered that we do NOT care for coconut milk, which is one of the ingredients in it. So, I decided to take this soup to work after I made it. My co-workers raved about it, so here is the recipe! Just click below!
(I made a few adjustments. Used rotisserie chicken & instead of using crock pot, just cooked it on the stove about 20 min).
Here's a tasty dish I made last night. I've seen it in several different forms on Pinterest. The recipe for the way I made it is below, along with my recipe for the salsa in the photo!
Chicken Taco Casserole
1 (10 oz) bag tortilla chips, crushed
2 (10.75 oz) cans cream of chicken soup
1 1/2 cups sour cream
1 (14 oz) Ro-tel tomatoes
1 can black beans, drained & rinsed
1 (1 oz) packet taco seasoning ( I didn't have taco seasoning, so I used chili seasoning and it worked just fine)
3 cups shredded, cooked chicken (I used rotisserie chicken from Kroger)
2 cups cheddar cheese (I used Colby/Jack. It was fab!)
Preheat oven to 350 degrees. Lightly grease a 9x13-inch pan. Mix both cans of chicken soup, sour cream, Ro-Tel, black beans, taco seasoning and chicken.
Spread half of the crushed chips on the bottom of the pan. Spread half of the chicken mixture over the chips. Top with 1 cup of cheese. Repeat layers. Bake for 30 minutes, until bubbly and cheese is starting to brown.
Here's the recipe for the salsa you see above:
2 (10 oz) cans Ro-tel tomatoes
1 (14 1/2 oz) can whole tomatoes, most of juice drained
1/4 cup minced yellow onion
3/4 tsp garlic salt
1 tsp cumin
1/4 tsp sugar
I use my food processor to mince the onion, rotel & whole tomatoes and mix in spices. I don't use Cilantro in my salsa because I don't care for it. But you can always add some!
This is even better after it sits in fridge a couple of days!
Here's a recipe that is really good, especially considering it's SUPER easy to make! Chicken Enchilada Skillet!
(I bought a larger can of enchilada sauce and had extra cheese. I add some of both to the leftovers whenever I reheat! Yum!)

Okay, I know I just posted that I'm trying to eat healthier food. BUT - every now and then, a person needs some bacon! I have a recipe to share with you that was passed down from my mother-in-law. This stuff is SO good! I had to make some this week. It's even better the next day!
Fried Cabbage with Bacon
1 small head of cabbage, chopped (okay, I am lazy, so I just use a 10 oz. bag of shredded cabbage)
1 medium green Bell Pepper, chopped
1 medium yellow onion, chopped
4 or 5 pieces of bacon
1 can of Rotel Tomatoes (undrained)
1/4 cup of vinegar
Fry bacon in skillet. When cooked, remove just the bacon from the skillet. Add cabbage, pepper and onion to bacon grease. Fry until just slightly wilted (maybe 4 or 5 minutes). Add Rotel Tomatoes and Vinegar, mix and cook, uncovered, until it’s the texture you like. For me, it's usually about 25 to 30 minutes. Then, crumble the pieces of cooked bacon and add to the mix. It's even better the next day when re-heated!
Starting this week, I've been trying to make healthier food choices and cut back on the junk food and sweets. I've done pretty well, so far. Got the house stocked with fruits & veggies, string cheese, skim milk, nuts and all that good stuff. I have gotten some really great tips and recipes from Hungry Girl. I encourage you to get on her emailing list if you want to get those tips!
Here's a simple but delicious recipe I came up with after reading some of her tips. I take 1-2 cups skim milk (I also just bought light Almond Milk to use, which has fewer calories), about 7 or 8 pieces of ice, several big spoonfuls of frozen cherries (I would say it equals about 20 frozen cherries), and a packet of sugar-free hot cocoa mix. I blend all these with my hand mixer to make what I call "Chocolate-Covered Cherry Shake." And believe me, it's REALLY good! I have also done this shake with unsweetened whole frozen strawberries, but I had to add some Splend for sweetness. Today, I am going to try this recipe with a banana, instead!
Black Bean Burgers!
Here's something we added to our meal rotation a few years ago. Healthier, yet still delicious -Black Bean Burgers! We eat them just like regular burgers - on a bun, loaded with lettuce, tomato, onion, mustard & ketchup. Yum!
Ingredients: 1 (16 oz) can of black beans, drained
1/2 green bell pepper
3 cloves garlic
1 tablespoon chili powder
1 tablespoon cumin
1 tsp hot sauce
1 cup oats
Directions: Preheat oven to 375. Mash beans until thick and pasty (I use food processor) . Finely chop bell pepper, onion and garlic (I use the food processor for this, as well). Next, stir pepper, onion and garlic into the mashed beans, along with the rest of the ingredients. Put mixture into fridge for about an hour so patties will be easier to shape.
Divide mixture into 4 patties. (I did flatter patties and ended up with 5, as you can see). Place patties on a greased baking sheet and bake for about 10 to 15 minutes on each side.

Black Bean Soup!
Here's a recipe I came across on Pinterest recently. I made it last week and have to give it a big thumbs up! It was super simple to make and since I had everything on hand but the beans, required buying very little. Click on the photo below for the recipe for Black Bean Soup!
Once again, I made my new go-to dessert and brought it to work. It was gone in NO time! I got this recipe for Graham Cracker Brownies from the Daily Journal. This stuff is rich but addictive! I can't stop eating them! And they are SO easy!
Graham Cracker Brownies 2 cup crushed graham crackers
1 can sweetened condensed milk
3⁄4 cup chocolate chips
1 teaspoon vanilla
Combine all ingredients and pour into a greased 8x8-inch pan. Bake at 350 degrees for 25 minutes.
(I add chopped pecans to mine)
We made some wonderful food over the wknd and I just had to share the recipes! We stopped by the Farmer's Market Sat. morning and picked up some of those gorgeous tomatoes from St Bethany Fresh along with some beautiful blackberries, and I hit the internet to search for some recipes that would do them justice. We already knew we were having Salmon, so it was just a matter of finding the right recipe, and this is the one! Sooo good!
Next up, I wanted some kind of tomato pie, and what I ended up making was a Cheese and Tomato Tart. It's the first time I have ever used puff pastry and I am hooked now. This tart was fabulous! I will most definitely be making this again! Click on the picture of my tart, below, to get the recipe.
Next up, a dish that required a little extra work, but was well worth it: Green Bean & Bacon Bundles. My husband said these were the best green beans he'd ever had. He never oohs and aahs over food like I do, but he sure did when he tried these beans!
For dessert, I put the rest of that puff pastry to good use by making homemade Blackberry Turnovers. Click on my photo below for the recipe I used as a guideline. I just changed the filling by mixing blackberries with sugar and letting them sit overnight. That's all it took, and they were delicious!
Here's what I'm planning to make this wknd. Got this recipe for a Chicken Broccoli Braid from a Pampered Chef party that a friend had years ago. I have only made it once, but it was excellent! Can't wait to make it again. The only difference in this recipe is that I throw in a little onion powder.
Here's a great summer dish that I plan to make again this year. It's wonderful with fresh tomatoes, but you can make it year-round with canned tomatoes as well! I've made this for several friends and everyone really seemed to enjoy it! It's also super easy to throw together!
Tomato Basil Pasta
*3 1/2 lbs fresh Roma tomatoes, peeled, seeded and chopped OR 4 cans Diced Tomatoes with Basil, Garlic And Oregano, drained
*16 oz. Whole Wheat Pasta (I use Angel Hair)
*1/2 lb fresh Mozzarella cheese, cut into small cubes (can also use shredded Mozarella)
*1/4 cup Olive Oil
*4 cloves minced garlic
*1/4 cup chopped fresh Basil (I use dehydrated, which I found refrigerated in the produce section of Koger; same with the Parsely below)
*1/4 cup chopped fresh Parsley
*1/2 cup grated Parmesan Cheese
*1/4 cup Italian Dressing
Cook pasta, drain and toss with all of the other ingredients while hot. Sprinkle some Parmesan cheese and Parsley on top to garnish! Enjoy!

I was inspired by my co-worker, Michelle Lockhart, to make a big pot of soup this afternoon. She made a big pot of Chicken Noodle Soup a few days ago, and it sounded so good that I had to make some, too! I found this recipe online for Creamy Chicken Noodle Soup. I made a few adjustments and came out with a wonderful pot of soup! Yum!
In the treat-making category, I had one success and one failure this holiday season. I made divinity for my co-workers and it turned out pretty well. It wasn't perfect, as it came out a little bit dry and crumbly, but it was still quite good. Click on the picture below for the recipe I used (the only difference is that I used 1/2 tsp. of Cream of Tartar in my egg whites when I beat them).
I tried to make Oreo Balls for family this wknd & it was a total disaster. The oreo/cream cheese mix was mush and didn't get as thick as it should have in the fridge, then the almond bark was so thick that the dipping process didn't work too well. It all ended up in the garbage. That is my last attempt at making Oreo Balls!
